There was speculation a couple years back about opening a taco stand, but I have no idea if that is what's actually going ahead.

Just got an add about a 15 and 20 story development called society 145 for uptown waterloo. Any idea what this might be or is it a new project?

There was a thread for the project proposed there, https://www.waterlooregionconnected.com/...p?tid=1152 , but it's been so long since we heard anything who knows if it's the same proposal.
