That'll be a function of how much tank space they have for fermentation, and what kind of production tempo they can keep up-- and when they'll brew at all. I wonder whether they're going to, say, run the kettle while people are seated underneath. (It looks amazing to have the brewery located up there, but I don't want to think too hard about the consequences of boiling water, a bad seal, and gravity.)
